Couscous has been one of the things that I’ve been looking forward to cooking gluten-free. I used to have it with my parents, and I always loved it. Unfortunately, gluten-free couscous never really was good to combine with a busy lifestyle: the couscous had to soak for way too long. Until I found the perfect gluten-free couscous mix at the local toko!
This mix took a total of 5 minutes to soak the couscous, which is no trouble at all. And now: the recipe.
250 grams Gluten-free couscous(Bia – Italian food, 7.3g protein per 100g) = 17,75g
100 grams apple (red, with skin 0,3 g protein per 100 grams)= 0,3
100 grams feta (16 grams protein per 100 grams)= 16
100 grams bell pepper ( 0,9 grams protein per 100 grams)= 0,9
400 grams chicken (23 grams protein per 100 grams)=92
This adds up to around 127 grams of protein in a 950 gram meal, which is 63,5 grams protein per person (and hardly any fat)!
The way to make it is incredibly easy:
1) start by cooking your chicken with some salt and pepper
2)chop up your apple, feta and bell pepper
3) start soaking your couscous (cover the bowl with a cloth)
4) finish cooking your chicken, and then cut into bite-sized pieces (or shred)
5) mix and enjoy!
The meal was filling and tasty and has turned into a true staple dish!
